Fall Apple Harvest Recipes November 05 2015

As the amazing apple harvest from 2015 is winding down, we wanted to share two of our favorite apple recipes.  My personal favorites - homemade carmel apples and my version of Jason's Deli Nutty Mixed Up Salad - my all time favorite salad ever.

Nutty Mixed Up Salad Extravaganza

Ingredients:

4 cups of spring mix salad
1/3 cup cooked chopped or shredded chicken
1/2 chopped Fuji apple
10 red seedless grapes cut in half
2 T. chopped walnuts or pecans
2 T. of pumpkin seeds
2 T. of feta crumbled
2 T. of balsamic vinaigrette
1-2 T. dried cranberries (or raisins, if you’re in a pinch)

Assembly:

Easy.  Mix everything together, and devour as I do every time I consume this.

 

Homemade Carmel Apples 

Ingredients:

Apples (choose your favorite.  I usually buy Jonathan or McIntosh)
3 sticks butter, salted unless you really prefer unsalted
2 cup granulated sugar
1 cup brown sugar (light or dark, doesn't matter)
1 14-ounce can sweetened, condensed milk
1 cup dark corn syrup
1 1/2 tsp. vanilla
Wooden skewers or popsicle sticks

Add to a pot butter and sugars. Increase heat to medium. Stir in the sweetened, condensed milk and the corn syrup. Continue stirring until well combined.

Increase heat to medium high, continue stirring until mixture starts to boil. Once it starts to boil clip a candy thermometer to the saucepan (don't let it touch the bottom of the pan) and reduce heat back to medium. Keep stirring until the final temperature reaches 234-240 degrees (soft ball stage).

Once you've reached the proper stage remove saucepan from heat and stir in vanilla. Let the caramel sit for about 5 minutes and then begin dipping.
